Summertime Peach and Blueberry Parfaits


One of my favorite places to go is Central Market, a fully stocked, amazing grocery store located in Texas. Fortunately, as a chef, I am there A LOT! I stumbled across a recipe card last time I was there for a peach dessert that sounded fantastic and perfectly refreshing for hot summer nights. This is my version of the recipe I was inspired by and I hope you give it a try.

You can either make one big dish for a crowd to share (as pictured above) or make individual parfaits. You can easily scale this recipe up or down without any funky ingredient math.


Ingredients

This serves four people.

  • 4 peaches, sliced

  • 1 cup blueberries

  • 1/2 cup vanilla bean mascarpone cheese

  • ¼ cup almonds, toasted and chopped

  • ½ cup granola 

  • 1 teaspoon fresh thyme, minced

  • 2 tablespoons honey

Directions

  1. Arrange sliced peaches and blueberries on a large platter, in individual parfait glasses, or small bowls. 

  2. Place 1 tablespoon dollops of vanilla bean mascarpone cheese over the fruit. 

  3. Then sprinkle almonds and granola over the fruit and mascarpone cheese. 

  4. Drizzle honey all over.  

  5. Finish with a sprinkling of thyme on top.
